Egg Roll in a Bowl
Ingredients:
- 1 lb ground turkey or beef
- 1 white or yellow onion, chopped
- 1 tbsp oil (sesame or olive recommended)
- 1 tbsp minced garlic
- 1 tbsp grated ginger or ginger paste
- 1/3 cup reduced-sodium soy sauce
- 1 (16 oz) bag coleslaw mix
- Salt and pepper, to taste
- Cooked grain of choice (for serving)
- Optional: sesame seeds (for garnish), sriracha (for spice)
Instructions:
- Prepare ingredients:
- Chop the onion.
- Peel and mince the garlic.
- Peel and grate the ginger (or measure ginger paste).
- Cook the meat:
- Heat a skillet over medium heat and add oil.
- Add ground turkey or beef and cook for about 5 minutes, breaking it apart, until browned and cooked through.
- Add flavor:
- Stir in garlic and ginger. Cook for about 30 seconds until fragrant.
- Cook the vegetables:
- Add chopped onion, soy sauce, and coleslaw mix.
- Cook for about 5 minutes until the cabbage softens to your desired consistency.
- Serve:
- Spoon over your grain of choice.
- Garnish with sesame seeds or drizzle with sriracha for extra flavor.
