Recipe:

Egg Roll in a Bowl

Ingredients:

  • 1 lb ground turkey or beef
  • 1 white or yellow onion, chopped
  • 1 tbsp oil (sesame or olive recommended)
  • 1 tbsp minced garlic
  • 1 tbsp grated ginger or ginger paste
  • 1/3 cup reduced-sodium soy sauce
  • 1 (16 oz) bag coleslaw mix
  • Salt and pepper, to taste
  • Cooked grain of choice (for serving)
  • Optional: sesame seeds (for garnish), sriracha (for spice)

Instructions:

  1. Prepare ingredients:
    • Chop the onion.
    • Peel and mince the garlic.
    • Peel and grate the ginger (or measure ginger paste).
  2. Cook the meat:
    • Heat a skillet over medium heat and add oil.
    • Add ground turkey or beef and cook for about 5 minutes, breaking it apart, until browned and cooked through.
  3. Add flavor:
    • Stir in garlic and ginger. Cook for about 30 seconds until fragrant.
  4. Cook the vegetables:
    • Add chopped onion, soy sauce, and coleslaw mix.
    • Cook for about 5 minutes until the cabbage softens to your desired consistency.
  5. Serve:
    • Spoon over your grain of choice.
    • Garnish with sesame seeds or drizzle with sriracha for extra flavor.
